Cutlery buying guide

There are many specific tasks that require specialized kitchen knives, all of them essential for a fully equipped kitchen.

Chef's knife

CHEF'S KNIFE >

The most complete and versatile of the kitchen knives. It has a wide and triangular blade with a curved edge to rock it on the cutting board for precision. Mainly used for chopping, slicing and dicing.

Paring knife

PARING KNIFE >

Small kitchen knife with a short blade mainly used for peeling, cutting and carving fruits and vegetables.

Bread knife

BREAD KNIFE >

With a serrated edge to allow for easy cutting of bread crusts while preventing pressure that could crush the inner soft part of the bread. It can also be used to cut hard shells or rinds of some fruits or vegetables like pineapples or melons.

Utility knife

UTILITY KNIFE >

Between paring knives and chef's knives in size, and with similar versatility. They are typically used for cutting vegetables, meat or cheese of medium or small size. Utility knives may have a serrated edge for cutting tomatoes, lemons, oranges or small pieces of bread or sandwitches.

Slicing and carving knives are used to slice and carve large pieces of cooked meat, fish, or poultry. They are used to cut roasts and meat of different types in thin slices in order to keep food juices.

Peeling knife

The bird's beak knife, also called tourné knife or peeler, has a small curved blade that allows for precise cutting and peeling fruits and vegetables with a rounded form.

Steak knife

Santoku knife

The Santoku knife is a general purpose kitchen knife, the Japanese version of the western chef's knife. The word Santoku means "three virtues", referring to the three main tasks of the knife: slicing, dicing, and mincing.

Vegetable knife
